Hailey’s Chocolate Brownies
When I was young I loved watching my Mam and my Granny baking together. I would always get to lick the spoon when they were finished. The smell of baking always filled our home.x We baked many memories over those years and now with my lovely Granny in heaven I am always so thankful we had that special time together.x
It can be so easy nowadays to forget to slow down, to enjoy each other’s company, there is always something else to do, always something to watch, somewhere to go. Maybe it is because I grew up in the Country side but I loved and still love being at home, hanging out with my little people, making extra special memories whenever we can.x
Raising two little boys who have extra needs means I don’t always have as much time as I would like with Hailey. When we get our moments we steal away to have some fun and I am always so thankful for those special times we have together. I want her to be able to look back when she has grown up and know in heart that she too had a great childhood, that she felt the love we have for her, that she matters just as much to us as Conor and Jack. I know that I spend a lot of extra time with the boys helping them so when I have the opportunity I spend special time with Hailey carrying out activities she loves.x
Top of Hailey’s List of things she loves to do is always going to be Baking lol! Mainly because she likes to lick the spoon afterwards but also because she is always so thrilled when her special makes come out of the over. She is always so proud of herself when she holds up her little plate of baked goods and it warms my heart to see her smile.
So in preparation of Baby Jack’s upcoming 2nd Birthday Party Hailey has decided we best have a trial run of her Brownies, there’ll be no complaints from me as they are super tasty! I am not sure where the original Recipe came from as I have an old Recipe Journal that I have kept for years with some of my Mother’s and Grandmother’s Recipes in it. Hailey has claimed this is her own original Recipe so I will believe her lol! x
Chocolate Brownies Recipe
♥ Preheat your Fan oven to 190 degrees
♥Line a Baking Tray
♥Break 5 medium eggs in to a bowl and mix
♥Weigh out all of your ingredients and house in separate bowls/containers
♥Break up all of the chocolate in to small pieces
♥Melt your cooking chocolate in a microwave or on stove top using a saucepan of boiling water and a bowl
♥Gently melt the butter and sugar together in a large saucepan over a low heat to prevent burning. Mix continuously so as to ensure mixture blends well together
♥Take off the heat once your mixture has melted and is well blended together
♥Now add your melted chocolate, cocoa powder, flour and eggs to your butter/sugar mixture in a large bowl.
♥Ensure this mixture is well blended by continuously stirring until your mixture is smooth
♥Pour your mixture in to your lined baking tin
♥Bake in the oven for 30-40 minutes until the top of the Brownie is firm but the inside is still soft
♥Leave your Chocolate Brownies in it’s baking Tin to cool on top of a wire rack.
♥Once cool, cut into squares, decorate and serve.x
